A delicious, dry sparkling wine, the nose of the Stonebridge Sparking opens up to notes of tropical fruit, pineapple, guava, and papaya with a dash of raisin bread. On the palate, it balances acidity with a full mouthfeel, subtle nuances of coconut, apples, and pears, a dash of stone fruit or white peach, and a hint of red fruit on the back.
Grapes were sourced from select vineyards in Sonoma County, CA. Vineyard soils are comprised of sandy clay atop a limestone base with Eastern-facing slopes, allowing for the ideal natural irrigation and air drainage. The grapes are picked earlier than those used for still wines, when sugar levels are lower and acid levels higher to keep the Sparkling crisp.
The Stonebridge Sparkling wine is made using the traditional method whereby the harvested grapes are de-stemmed and pressed off quickly to keep the wine white. The juice is fermented dry in stainless steel tanks, then bottled with a small sugar addition to facilitate the secondary fermentation which carbonates the wine. The wine is then aged lying down, sediment is disgorged, and then a final dosage is added prior to the cork being placed in the bottle.
