The 2018 Cabernet Franc expresses aromas of mulling spices followed by cinnamon and clove with a strong nose of Peruvian cherry peppers and a hint of smoke–reminiscent of chipotle peppers. Deep garnet hue in color, it is mediumlight bodied with a full palette sensation and long finish. The front palette boasts flavors of strawberry and ripe plum with hints of sour cherry, while the back palette presetns a grippy tannins with the allusion of dryness and a light whisper of smokiness. It has a full mid palette and good structure and finishes with the flavors of caramelized peppers.

The Cabernet Franc grapes were destemmed, crushed, and fermented for 12–14 days, pressed off the skins, settled in the tank for three days and racked into barrel, then aged for nine months in neutral and new American Oak.
Food Pairing Notes
Supreme pizza, grilled meats and vegetables, and Flaming Hot Cheetos. The Felino & Manchego, Irish Cheddar, white Cheddar jalapeño spread, and Cajun peanuts from our Tasting Room snack options would pairly perfectly.
