The 2017 Estate Norton opens to reveal aromas of cardamom, cinnamon, and rhubarb. Grippy with well-structured tannins, notes of maraschino cherries, anise, and cloves dominate the palate followed by a medium finish.

The fruit was harvested, refrigerated for 24 hours, destemmed into open T-bins, allowed to soak for 24 hours, inoculated with yeast, fermented warm while performing punch down 2-3 times daily to control temperature and extract color. Once dry the wine was dumped into the press and squeezed for 2 hours, then pumped into tank, settled for three days and pumped into barrel for 14 months of aging.
