The nose of the 2016 Cabernet Franc expresses notes of summer-ripened raspberries, Tahitian vanilla, cotton candy, leafy greens, and a hint of white pepper. Medium in body, the palate offers hints of ripe cherry, almond, and raspberry jam, which lead to a medium-long finish.
The Cabernet Franc grapes were sourced from our Rock Mill Vineyard in Rappahannock, VA.
The Winery at Bull Run's Cabernet Franc grapes were harvested in October of 2016, de-stemmed, crushed, and macerated for four weeks under temperature controlled conditions, then transferred to temperature-controlled stainless steel tanks for four weeks for primary fermentation. After fermentation was completed, the wine was transferred into American Oak barrels and aged for nine months. The 2016 Cabernet Franc was bottled on August 30, 2017.
Food Pairing Notes
This Cabernet Franc’s light-body makes it a great match for aged cheeses, salami, Bolognese, and venison.
